Update and Low-Fat Pesto Recipe

UPDATE: Okay, confession time! I am reluctant to post since I have not lost a pound since starting this. But a commitment is a commitment. I guess I should be happy maintaining my weight as well.

I need to find ways to incorporate more physical activity in my life. Not casual, but intense physical activity.

In the meantime, I am still conscious of eating as healthy as possible without depriving myself of life’s simple pleasures. There is a restaurant in West Covina called One World and if you are carrot cake lover, you will discover that they have the BEST carrot cake EVER! I am serious.

RECIPE: I found a way of making pesto pasta low-fat! Generally pesto is really fattening because it contains a lot of olive oil. Olive is really good for you but in small amounts. I usually eyeball ingredients or taste as I’m cooking to achieve the desired taste. Warning – this dish is super garlicy! You might reconsider having it if you have a hot date planned that evening. I used this sauce over pasta but it can also be used as a sauce in sandwiches!

Equipments:

  • Garlic crusher
  • Blender

Ingredients:

  • 1 bag of fresh basil (Mine was from Fresh and Easy)
  • 3 medium-sized garlic cloves
  • About 10-12 raw walnuts
  • 1 medium-sized tomato
  • 3 tablespoons of olive oil
  • Salt and Pepper (to taste)
  • 1 bag of pasta (I use the flax whole wheat pasta from Trader Joe’s – it’s got the most fiber compared to other pasta)
  • Parmesan Cheese

Basically the tomato is used as the liquid base instead of a ton of olive oil.

First blend the tomato. Add a handful of basil and blend. Keep doing this until all the basil has been blended. Add the walnuts and crushed garlic and blend. Add salt and pepper to taste.  That’s it! Your sauce is ready! You don’t heat up the sauce so make sure your pasta is ready and warm when your ready to serve. Pour the sauce over the warm pasta and serve. Add Parmesan cheese to your liking. Yum!

An added bonus to this recipe is that the sauce is not cooked which means you don’t lose any of the nutrients of the fresh ingredients.

Note: If pesto sauce hangs out for a while… even within hours, the sauce turns from bright green to dark green. The sauce didn’t go bad if you see this happen so no worries. You will notice this if you have leftovers.

  2. The pesto recipe sounds great, we will try it tonight!
    Stock up on the Trader Joe pasta you reference above. Unfortunately it is being discontinued due to slow sales. The good news is it has been reduced to .99 so stock up while you can!
